Cauliflower Crust Pesto Pizza

I have been wanting to make a cauliflower crust pizza for a while now since most on the market contain egg I knew I had to make a crust from scratch! I'm not going to lie this was pretty time consuming but in the end tasted insanely good! It was light but filling with the pesto which I'll also include the recipe for, that could be awesome as a tip and even on pasta :)

INGREDIENTS

  • 1 large head of cauliflower
  • 3 tbsp of ground flax
  • 4 or more tbsp of water
  • 1/2 cup of chickpea flour
  • pinch of salt
  • 1 tbsp of Italian seasoning
  • 1 tbsp of garlic powder
  • 1 tbsp of onion powder

DIRECTIONS

  1. Bring a pot of water to boil with about 3 cups of water
  2. Remove stem your cauliflower and break apart
  3. Place into blender and blend until a rice like consistency
  4. Pour that rice cauliflower into the boiling water and cook for 5min
  5. Once cooked drain the water and place your cauliflower rice into a bowl and leave in the freezer to chill for 15min
  6. Once chilled get a thin cloth or nut milk bag and squeeze the remaining water from the cauliflower
  7. Place into a large bowl and mix together the other ingredients
  8. Chickpea flour, water, and spices.
  9. Once mixed together lightly oil your baking pan or pizza pan
  10. Now roll out or form with your hands the crust
  11. Bake for 15min then remove add your sauce and topping then cook for another 12-15min
  12. Enjoy!

INGREDIENTS

  • 1 large handful of basil
  • 1/2 cup of olive oil
  • 3 cloves of garlic
  • pinch of salt
  • 1 cup of walnuts
  • 1 tbsp of corn meal - remove if making pasta sauce
  • 1 tbsp of Italian seasoning
  • 1 tbsp of onion powder

DIRECTIONS

  1. Blend all ingredients in a blender or food processor until creamy
