Homemade Mac & Cheese

If you don't like macaroni and cheese I don't think I can be your friend... jk but kind of being serious because this is my favvvvvvorite food of all time! This was probably the biggest thing I missed when I first went vegan, and no this won't ever taste like kraft mac and cheese but it will still taste delicious :) I hope you get a chance to make this because its a real good one!

INGREDIENTS

  • 1/3 cup raw sunflower seed (soaked for 30min- overnight)
  • 1 cup raw cashews (soaked for 30min- overnight)
  • 16oz pasta of your choice
  • 1/2 cup carrots
  • 4 cloves garlic
  • 3 cups vegetable broth
  • 1/4 cup cream cheese (I used Kitehill)
  • 1/2 cup nutritional yeast
  • 2 tablespoon tomato paste
  • juice of 1/2 of a lemon
  • 4 tablespoon onion powder
  • salt/pepper to taste
  • 2 tablespoon olive oil

DIRECTIONS

  1. Cook pasta and set aside
  2. sauté garlic in the oil olive then pour into your blender
  3. add carrots and water to a pot cook until tender
  4. add all ingredients into your blender (except pasta)
  5. blend until very creamy not lumps or bumps in the sauce
  6. add more broth if it isn’t blending well
  7. now more sauce into a pot and cook down for 15-20min
  8. stir together the noodles and sauce
  9. Enjoy!
