Homemade Ravioli

Ravioli use to be my favvvvv pasta ever and when I went vegan there wasn't too many options for plant based ravioli... But today that changes because I made my own! This recipe is super duper easy slightly time consuming but was only 3 ingredients for the dough and then you can add whatever filling you want. I used my pesto recipe and my mom was obsessed, again and wants to eat pesto with everything!

  • 2 cups of all purpose flour (more for rolling the dough out)
  • 1 cup of water (more if dough if necessary)
  • 2 tablespoons of olive oil

  1. Pour 2 cups of flour into a large bowl
  2. add 1/2 cup of water and mix
  3. add another 1/2 cup of water and mix again
  4. then add 2 tablespoons of olive oil
  5. pat hands in extra flour to prevent sticking
  6. mixing with your hands is now the easiest way to fold all the ingredients together and create optimal dough
  7. after you think you have mixed and kneaded the dough enough
  8. find a large surface to powder with flour
  9. then roll out the dough pretty thin
  10. after rolled out find a cup that you think has a good size mouth for ravioli I used one of my smaller mason jars to cut the ravioli shape
  11. you will now need a baking sheet pan and parchment paper (this will help keep the ravioli after freezing to stick to to the pan)
  12. You will also want to have your filling near by
  13. Once you add your filling you will want to use a fork to pinch the sides together to keep the filling inside when cooking
  14. This recipe makes about 20-30 ravioli depending on the size
  15. after you have filled up your baking pan you will place this in the freezer for 1-2 hours
  16. Then boil water and cook for no more than 4-5min
  17. Add your sauce and enjoy!

This recipe will be one of my favorites to make on a Sunday afternoon for family dinner! Let me know what kind of fillings you add to yours! Im thinking next time some yummy butternut squash :)
